Lamb and pesto pastry swirls

This sounds like it shouodn’t work but it does! I also can’t take credit for this recipe, I buy these from a guy in Horsham market and thought I’d try and make my own because can’t always get into town on a Saturday to buy them.

Prep time: 5 minutes

Cooking Time: 30 minutes roughly


Ingredients:

  • 500g lamb mince

  • 3-4 garlic cloves, I prefer to use fresh garlic over the paste / easy garlic. The more garlic the better in my opinion! Make sure garlic is chopped finely or use a garlic press

  • 1 red onion chopped into small pieces

  • 3-4 teaspoons of green pesto

  • Ready rolled puff pastry

Method:

  • Chop the onion and garlic into small pieces

  • Mix the onion and garlic in a bowl with the mince and add 3-4 teaspoons of green pesto. 3 will be a more subtle taste.

  • Once it’s all mixed together in the bowl roll out the pastry on a flat surface or chopping board

  • Add the lamb from the bowl on top of the ready rolled pastry and spread evenly until the pastry is covered

  • Roll the pastry from one end to the other

  • Once it’s one big roll cut along making inch thick swirls

  • Place on a baking tray and pop in the oven for approximately 30minutes. Keep checking and make sure the lamb and pastry is cooked through

  • Serve and enjoy!

I like to serve mine with vegetables
